Mushroom Bacon Tartlets
For Pastry Crust-
4 oz. Cream cheese (I use 8oz. for thicker)
3 Tbs. Butter or margarine, divided
1/2 C. Plus 1 tsp. All purpose flour
1/4 tsp. thyme
1/2 C. shredded Swiss cheese
3/4 C. Chopped green onions
3-4 slices bacon, crumbled
8oz. Fresh mushrooms, coarsely chopped
Crust: Using mixer blend cream cheese and 2 Tbs. Butter until smooth. Add ¾ C. flour. Blend well. Form into a ball and refrigerate in waxed paper for one hour.
Filling: Melt remaining 1 Tbs. Butter in skillet over medium heat. Add mushrooms and onions and cook until tender. Remove from heat and put aside in bowl to cool. Using the same skillet, fry bacon until crispy, drain, cool then crumble.
Once dough is chilled divide into 24 pieces and place each into mini muffin cup spreading it over the sides and bottom. (greased if desired.)
Filling: Place egg, remaining 1 tsp. Flour and thyme in mixer and blend until combined. Stir in cooled mushrooms/onions. Use a slotted spoon so liquid will drain. Add bacon and stir. Spoon mixture into pastry lined mini muffin cups.
Bake: 375 degrees for 15-20 minutes or until egg mixture is puffed and golden brown.
